How should I store my coffee?
Coffee is perishable and will stale quickly if not stored properly. Buy only the amount of coffee that you will use between visits to the store and keep it in a moisture-proof, airtight container. If you brew coffee daily and use up your supply frequently, place your airtight container in your cabinet or cupboard. Coffee which will not be used within ten days should be stored in your freezer and thawed out before use. The most important part is a good, moisture-proof, airtight container!

How is coffee decaffeinated?
The decaffeination process starts by increasing the moisture content of the green (unroasted) coffee beans, to make it easier to remove the caffeine. Then one of several solvents is used to extract the caffeine. The solvents are safe and meet FDA standards for coffees sold in the U.S.

The flavor of decaffeinated coffee depends on the quality of the beans, the blend, the roasting technique and the decaffeination method. All decaffeination methods remove 97-99% of the caffeine.

Are all specialty coffees dark and oily?
No, although many specialty coffees are marketed this way. Roasters choose the level of roast color development for each coffee sold—from a very light roast, to a medium roast, to a heavy roast, to a roast where the oils come to the surface of the beans. At each level of roast color, the aromatics and flavor profile of the coffee change. Our roasting standards for each individual coffee bring out the peak of the flavor characteristics inherent in the green coffees. Roast color is a roaster’s choice—subjective

How are coffees flavored?
Freshly roasted coffees are combined with a liquid flavoring (hazelnut, vanilla, etc.) to produce flavored coffees. The coffee beans absorb the flavoring and release it during the brewing process to produce an aromatic and flavorful beverage alternative.

Are flavored coffees higher in calories?
The number of calories in a cup of flavored, unsweetened coffee is not significantly different from those found in a plain (unflavored) cup of coffee—3 to 4 more calories per 6 ounce cup.

How do I brew a Perfect Cup of Coffee?
Start with fresh coffee that has been stored in an airtight container in a cool, dry place. Match the grind of coffee to the type of coffee maker being used.

Type of Grind Brewing Method
Very Coarse Open Pot
Coarse Percolator
Medium Plunger/ Drip Methods
Fine Espresso/ Vacuum
Extra Fine Turkish Ibrik
  • Measure (do not guess) the amount of coffee. The recommended amount for regular strength coffee is two (2) level tablespoons (1 coffee measure) per six (6) ounces of water. Adjust this to suit individual taste.
  • Use fresh, cold water. For best results the coffee maker should heat the water to 200 degrees Fahrenheit.
  • Make sure the coffee brewer and server is clean and thoroughly rinsed before using. Brewed coffee absorbs other flavors easily.
  • Serve brewed coffee immediately. Never leave on the warmer over 20 minutes. If it won’t be used before that time, transfer the brewed coffee to an insulated container, such as an air pot. This will help keep the coffee from breaking down and losing flavor. Plus, it will stay warm longer.
  • Keep the coffee maker clean. Remove grounds from the brewer as soon as the brewing cycle is complete.

What is Specialty Coffee?
Although a concise definition of the term has yet to be published, there are several characteristics that make up specialty coffee. There are two major types of coffee, Arabica and Robusta. Arabica is grown at high altitudes (4000-6000 feet), handpicked, and graded and separated for consistency. A lot of coffees are 100% Arabica, but only the top 10% or so are selected as “specialty coffee”.

The Specialty Coffee Association of America (SCAA) lists five (5) basic groups:

  • Central and South America Coffees generally mild in flavor with light to medium body with considerable acidity
  • East Africa and Yemen (the birthplace of coffee) Coffees typically are intense in aromatics and flavor, with unique wine-like or fruity flavors along with bright acidity.
  • Indonesia and the Pacific Coffees known for their full-bodied smoothness, rich, earthy flavors and low acidity.
  • Dark Roasts Coffees with oils from the bean having been brought to the surface from light oil coverage to total saturation.
  • Blends Coffees that combine single origin coffees to create an even better combination. Mocha Java is a “classic” blend.

What is “the best” coffee?
Coffee is subjective. Using the groups above as a guideline, start your tasting and exploration of specialty coffee. You decide which coffee is “the best.”

How are beans roasted?
Roasting is a critical factor in creating the flavor profile of the coffee bean. The degree that beans are roasted can determine if the coffee will be light or dark, sweet or bitter.

During roasting the raw green coffee bean loses moisture, turns yellow, and then “pops” open, much like popcorn in about 15 minutes. As this happens, the bean nearly doubles in size, and begins to assume the light tan color of lightly roasted coffee. Once this stage is achieved, the heat source is turned down and the coffee rapidly darkens in color. Once the desired degree of roast for a given coffee has been achieved, the process is stopped by using either a brief spray of water followed by air-cooling or by air alone.

How many types of roasts are there?
Roasted beans generally fall into four main categories:

  1. Lightly roasted coffees tend to have intense aromas, with crisp, lively acidity as the dominant flavor and a relatively light body.
  2. Medium roast beans are full in body while maintaining most of their acidity.
  3. Dark roasts have a bitter and a more pungent flavor.
  4. Very dark roasts have a distinctive bitter, carbon-taste as their primary flavor.

What is the difference between white, green, black and oolong tea?
Teas are categorized by the drying and oxidation process they undergo.

  • White tea is the least handled- only being plucked and dried.
  • Green tea undergoes a small amount of processing and is then heated to stop oxidization.
  • Oolongs (which cover a wide range of processes) usually have some physical manipulation done to them, breaking down the cellulose within the tea leaf to bring out the flavors. Oxidation varies 10% to 75%.
  • Black teas are fully oxidized. The tea leaf is cut and bruised, bringing out the various flavors nascent in the leaf.

Is tea good for you?
Yes. All tea contains polyphenols, which are potent antioxidants that improve the body's defenses and suppress free radical activity. See health info page on this site.

Does the tea have polyphenols?
Yes, black, oolong, green and white tea all contain polyphenols. Polyphenols are potent antioxidants that are widely acclaimed to help improve the body's defenses and suppress free radical activity.

Does tea have more caffeine than coffee?
No, the caffeine content in a cup of tea is half that in a cup of coffee of the same size.

Does Tea have calories?
No - simple tea leaves do not contain calories, but when blended with fruits they will possess a small amount of caloric energy potential.
